Im joining in on Summer Fest again this year, but I can hardly believe its summer. In some ways, it seems like I just moved back to Fresno, but as the temperatures recently started up into the hundreds, I had flashbacks to last year and realized that this is my second summer here. Ive been back here, in the place where I grew up, for more than a year. Well, its definitely starting to feel like home again and Im happy to be here.

Although the summer heat can seem almost unbearable at times, there are plenty of reasons to put up with it. Living in the San Joaquin Valley definitely has its advantages and I think the amazing variety of local stone fruit is right up there on the top of the list. Unfortunately I missed the Organic Stone Fruit Jubilee this year, but Ive been buying local organic peaches at my favorite farmers market and theyre really great this year.

Since Ive changed the way Im eating, I probably wont be eating a whole lot of peach cobbler or nectarine muffins this year, but Ive been enjoying our local peaches just the same. Since cutting out sugar four months ago, raw fruit tastes so much better to me than it ever has before. A bowl of fresh berries or sliced peaches drizzled with heavy cream satisfies me just as much or even more than heavy, sugar-laden desserts ever did.

This is made up of few ingredients and is jam-packed full flavor. I love how easy it is to make. Drinking healthy doesnt need to be complicated. I buy huge bags of frozen berries and big tubs of Greek yogurt at Costco and it makes this recipe affordable and easy.

How To Freeze Fruits

Berries: The fresh berries can be ziplocked and stored airtight for a couple of months.

Wash the berries, air dry them and freeze them either in the solo form in zip lock bags or combine a mix of berries in the same bag and store airtight.

If slicing the berries, wash them well before slicing and let them air dry well. Place the berries in layers on a pan and freeze for a few hours.

After freezing for 3-4 hours, gather all the berries, transfer them to a ziplock bag, and freeze them for months.

Bananas: Peel the banana, chop them into round slices, place them on a baking tray lined with parchment paper, and place them in the freezer for a few hours.

This way of freezing bananas in the first step lets the slices not stick to each other while freezing airtight.

Gather all the banana slices after freezing for 3-4 hours, place them in a ziplock bag, seal them tightly, store them in the freezer, and use them when required.

Mango: Follow the same procedure as mentioned for bananas.

Pineapple: Peel the pineapple, chop the fruit into cubes and store the pieces airtight sealed bag in the freezer.

If the fruit appears sticky, follow the procedure similar to freezing bananas or store them directly in air-tight bags in the freezer.

    I love smoothies. Theyre fast, easy, healthy, and refreshing. This one has just three ingredients but youd never know it based on how creamy, smooth, and satisfying it is.

    I got the ingredients at Vons. Look for the new tag at your local Vons or Safeway stores to find new items like these at great values. I used Silk Unsweetened Cashewmilk, Silk Strawberry Dairy-Free Yogurt, and a frozen mixed berry blend of strawberries, blueberries, raspberries, and blackberries.

    I love baking and making smoothies with Silk products because theyre so low in calories and fat, theyre vegan and dairy-free, and I always get impressive-tasting results.

    Between the naturally sweet fruit and the strawberry yogurt, I didnt need to add sugar to the smoothie. Love it when that happens!
