The rockpools at the top of gorge above Rainbow Falls are definitely the more notable feature of the Blackdown Tablelands due to the amazing photos that have been uploaded in recent times.

It was due to seeing photos of these amazing rockpools is what encouraged us to put Blackdown Tablelands National Park on our must do list.

We spent so much time enjoying these epic rockpools on our day trip to Blackdown Tablelands that we fell short of time to explore more of this fabulous National Park in Central Queensland.

How To Find The Rockpools

Head up the steep narrow winding road to Blackdown Tablelands until you will reach Horseshoe Lookout which is completely sealed.

Continue for 13kms from Horseshoe Lookout along the dirt road which is slightly rough in places but accessible in 2WD in dry conditions. It took us roughly 22 minutes in our 4WD to do this stretch.

The carpark at the end of the dirt road is the start of the walking track to both the fabulous Rockpools and Rainbow Falls. There is also a toilet available at the Rainbow Falls Carpark.

From the Rainbow Falls Carpark, follow the walking track until you reach the Rainbow Falls sign indicating the 240 stairs.

Instead of turning left and making you way down into the gorge via the stairs to Rainbow Falls, take the track to the right.

Follow it for approx. 5 minutes to reach the famous rockpools. In total, it took us around 25 minutes one way from the Rainbow Falls Carpark.

How To Make Mcdonalds Strawberry Banana Smoothie

It really doesnt get any easier than this recipe.

  • Frozen Strawberries
  • Banana
  • Crushed Ice

Put everything in your blender and mix. Enjoy right away. It makes a great on-the-go meal.

You can find the frozen strawberries in your freezer section, they are often sold near the frozen fruit. They can come in small square boxes instead of bags like you see a lot of the frozen fruit. I like to use these because the strawberries in these packages were picked when they were perfectly ripe, and they are sweetened wonderfully.

How To Make Banana Shake

1. Add 2 ripe bananas. Here I have also added 20 to 24 cashews for a protein boost. You may skip them if you dont prefer or add 6 scoops of vanilla ice cream instead. Cashews give a more rich and creamy consistency to your banana shake. Also you can optionally soak them for 3 to 4 hours for health benefits.

2. You may skip this step if using ice cream. Add sugar or honey as per your taste. 2 tbsps is a good amount. I used 4 pitted dates instead of sugar. Just note that adding too many dates can alter the color of your shake. Also add ½ teaspoon ground cinnamon or ¼ tsp cardamom powder.

3. I also add 1 tsp vanilla extract for extra flavor.

4. Pour 1½ cups chilled milk. If using ice cream you will need only half a cup of milk. I used this homemade almond milk here. You can also use coconut milk.

5. Blend everything to smooth shake. You may add more milk if you prefer to thin down or add more bananas to thicken.

Pour banana shake to serving glasses immediately and serve.

How To Make Banana Milkshake With Almonds

Years ago we stopped using store bought vegan milk and moved on to making our own at home. To make this banana shake, I do not blend and extract the milk from the nut pulp but instead add the nuts to the blender and make the milk. Then simply add the fruit and flavoring ingredients. Blend it to a smooth, rich and creamy shake.

1. If using regular milk, then boil, cool and chill in the fridge. According to ayurveda boiled milk is easier to digest.

2. I make almond milk instead of using regular milk. So I wash and soak the almonds for 4 to 6 hours. However you can skip and just add them directly to the blender.

3. Peel off the skin. If well soaked the peels just come off easily.

4. Give the nuts a good rinse.

5. Add them to the blender.

6. Add the sweetener. I added 2 dates. Do add as needed.

7. Pour chilled water or milk. You can also use coconut milk.

8. I added vanilla extract. Cinnamon powder goes well during winters and cardamom powder during summers.

9. Blend until the nuts are smoothly blended and you have frothy milk.

10. Add bananas. Break them to 2 to 3 parts.

11. Blend until smooth and frothy.

    For a great Fruit Smoothie, it needs to be made with fresh or frozen fruit not the flavoured syrups that Cafés use to make Milk Shakes and Thick Shakes.

    Over the last few months, I have had the time to perfect the smoothies that I make for us at home for brekkie.

    They have Kevs seal of approval as the Migaloo Café in Hervey Bay had set the benchmark for us in fruit smoothies, theres are the best weve found while traveling around Oz!

    Here I have used over ripened bananas. As they are overly sweet, you wont need to add any sweetener.

    2. Add ¼ teaspoon ground cinnamon powder and ½ cup lite coconut milk. You can swap cinnamon powder with ¼ teaspoon vanilla extract or add both.

    For a more sweeter taste if you like add 1 to 2 tablespoons of your preferred sweetener.

    Here I have used a mix of toasted sunflower seeds, pumpkin seeds, white sesame seeds and flax seeds. Feel free to add your favorite nuts or toasted seeds.

  • Put the ingredients in a blender and whir it up!
  • This will make two large smoothies.

The only difference in choosing between fresh or frozen fruit is how thick you want it to be.
