Prior to the pandemic, Id often stop to buy a creamy avocado smoothie for all of US$1! from one of the ladies from the long row of juice carts that ran beside Psar Chas or Old Market in the heart of Siem Reaps historic quarter.

Be sure to start with a ripe avocado. You can tell if its ripe by squeezing the fruit very gently. Its ripe if it yields slightly to the pressure and feels just a little bit soft but not mushy.
